


In the world of Japanese tableware, even differences in shape reveal a rich diversity. Broadly speaking, vessels can be divided into plates, which are shallow, and bowls, which have depth. Between these two categories lies a gentle gradient of forms.
If we arrange bowls by depth, they generally appear in the following order:
・Hirabachi (Flat bowl) – the shallowest type, closest to a plate
・Asabachi (Shallow bowl) – a slightly deeper, highly versatile bowl
・Moribachi (Serving bowl) – used for generously presenting dishes
・Fukabachi (Deep bowl) – suited for dishes with plenty of broth or sauce
In reality, however, the boundaries between these categories are not strict. Like cooking itself, the world of tableware allows for a certain degree of flexibility and interpretation.
Among them, the shallow bowl (asabachi) occupies a particularly convenient middle ground between plate and bowl. Because it is not very deep, the dish can be appreciated at a glance without peering inside. The food appears neatly arranged, almost as if placed on a small stage.
Traditionally, bowls are used for dishes with some liquid—such as simmered foods or sauced preparations. Yet the shallow bowl is different. It comfortably accommodates both moist dishes and those without much liquid.
For example, simmered hijiki seaweed, potato salad, or a portion of nikujaga with a light broth. Even sautéed vegetables or pasta can sit naturally in a shallow bowl. Compared with a plate, it provides a sense of security for foods with a little sauce, while avoiding the heaviness of a deep bowl.
On the dining table, the shallow bowl becomes a truly versatile piece of tableware. It works beautifully for side dishes and can just as easily hold a modest main dish for one person.

Quietly supporting the presentation of food, the shallow bowl is a kind of understated partner at the table. Sometimes, it is precisely this sense of “just the right depth” that allows a piece of tableware to remain beloved for generations.
